mr aurora doesn't like quinoa unless it's this recipe. (i think it's the apricots!
quinoa with pine nuts and apricots serves 4 2 cups water 1 cup quinoa 1/2 cup toasted pine nuts 1 tsp. salt 1 tablespoon fresh lemon juice 1 tsp. paprika 1 tsp. ground cumin 1/2 tsp. ground coriander 2 tablespoons olive oil 1/4 cup dried apricots, chopped coarsely 1/2 cup red onion, minced in a medium saucepan, bring water to a boil. stir in quinoa and cover the pot. simmer for 10 minutes. turn off flame and let quinoa remain in the covered pot for another 20 minutes so the grain will absorb water. transfer quinoa into a large mixing bowl. fluff slightly with a fork or rubber spatula every few minutes so heat can escape. toast pine nuts in a dry skillet over moderate heat, stirring until nuts are golden brown, about 3 minutes. set aside. when quinoa is cooled slightly (still warm), add remaining ingredients and toss until everything is well mixed. serve to cries of delight! -------------------- What would you do if you knew you wouldn't fail?

We finally tried quinoa this week. We used onion, green pepper, tomatoes, garlic and some tomato juice. It was really good.

to my chagrin i found that this recipe is the only one i actually have. but i did run across some others, thanks to a new food blog that i happened to find out about today.
quinoa with grilled corn and poblano peppers tangy quinoa salad (this one looks good; i may try it myself) curried quinoa with cauliflower (i want to try this one too; i'm a big fan of one-pot meals) and one of my favorite food blogs also has a few quinoa recipes: http://vegandad.blogspot.com/search/label/quinoa -------------------- What would you do if you knew you wouldn't fail?

mr aurora and i have had curried quinoa with cauliflower twice now, and we really like it. mr aurora says it's easy to make. (of course, easy for him is different than easy for us, but at least he didn't say it was hard!)

i strongly suspect that any tabouli recipe can be used with quinoa instead of bulgur.
